Quercetin is one of a group of natural compounds known as Flavanoids which are found in fruits and vegetables, particularly in fruit skins. It is found in kale, broccoli, tomatoes and asparagus. The ability of flavonoids to act as antioxidants depends on their molecular structure and where the hydroxyl groups are placed in the molecule for free radical scavenging.
Quercetin is the most abundant dietary flavonol with a suitable molecular structure for powerful antioxidant, free radical scavenging abilities.
